Main Goal - To be healthy for my family... I have an awesome family.

Here's some things we do, beyond cooking it in the slow cooker:
1. Put it in the blender and turn it into high grade mince
2. Cube it and some kidneys and make steak and kidney pie
3. Using a double-serve, cherry pick the lean parts for lean beef to make jerky with. Then just casserole the fatty half that is left over
4. Same as 3, but instead of jerky make pemmican

Your Dad is So Fat
I like to put stew beef in the crock pot until it's falling apart and can be shredded with a fork. Then you can season it and use it in a number of things--taco salad, curried over cauliflower rice, etc.
This is what just decided to do for dinner tonight as it will be quick and easy since I won't use a crock pot, but still cook it kind of slow. And I have a big head of cauliflower ready.... and I absolutely love curry! Next time I will try something that takes more time and effort to make.
