What is Italian sausage?
I see a lot of American recipes using Italian sausage, but here in Europe we're not sure what they are.
So are they like the large sausages that we call "Toulouse", or are they more like salami/chorizo etc?
Anyone know the equivalent in British or European?
Maybe you could describe them - spicy, sweet etc so we have an idea.
Typically, in the US, Italian sweet sausage is a sausage made from ground pork seasoned with fennel and/or anise. The recipe I use comes from a book on sausage making written by Stanley Marianski. This would be a fresh sausage and not a cured or fermented sausage like peperoni, salami, mortadela etc
Fresh ground pork Sausage mixed with Italian spices. I just make my own
Garlic, fennel, paprika, salt, pepper, coriander.. several other things I cant remember at the moment (seriously I have like 40-50 different spices available in my kitchen.. I just spice to taste)

I ought to have another go at making sausages myself. I'll look for a recipe for "Italian" sauages.
