I was an insomniac from the age of 11-30/31. Lots of stress and anxiety that I went through. I started sleeping better when I was working out and losing weight. My sleep has really gotten a lot better within the past year. Magnesium helps me relax and my mind doesn't race like it used to unless my husband and I either get into an argument or I watch a scary movie.

Wow, I am STILL sore from all those steps.
I just found out that my YMCA has put up a new heavy bag for me to beat on. Some idiot ruined it with a knife a while back, and it took months for the YMCA to get a new one. Kind of weird because I wouldn't expect that in my area.
Anyway, I haven't updated the website yet with new stuff, but for sure I plan to get the "pro" version so I can do all the cool stuff like having videos and audio clips, and lots of other neat stuff. It's kind f fun building it, but unless I upgrade, I will eb very limited, and BORING.
Today, I had beanless chili. I have never made that before. Until Primal, I was a big consumer of all beans. It would not be uncommon for me to make chili with 80 - 100 ounces of beans in the batch.
I made this w/o a recipe, but this should be close:
Beanless Chili:
4 ounces of bacon grease
2 pounds of diced stew meat
2 chopped onions
2 diced jalapenos
2 cloves of garlic, chopped
about 36 ounces of fresh tomatoes, processed in my cuisinart until just barely chunky. I didn't skin or de-seed them.
3 TBS of chili seasoning
1 TBS of chili powder
2 TBS of maple syrup... yes, maple syrup.....
salt and pepper
Sear the diced stew meat in the bacon grease and set aside. You may have to do it in batches. I did.
Saute the onions, garlic, and jalapenos in the remaining grease - there won't be much left. Be careful not to let anything burn.
Now take EVERYTHING and put it in a dutch oven if you have one. Cook in a 325 degree oven for 2 - 2.5 hours.
Now, since rice isn't rally primal, here is what I did: I riced a big head of cauliflower and put the stew over it.... It was good, but I am not sure I would do it again. It took a few bites to adjust to chili and caulilflower in the same bite. The chili was really tasty, tho.
I am sure you could easily adapt to stove top use, but I didn't want to have to be stirring all day.

Here is adaptability.... I took the leftovers from the recipe above, and stuffed it into some green bell peppers, and voila`, stuffed peppers.

My husband doesn't sleep very well either. However, he refuses to try anything more than one night, so that is his burden to bear. I really think it has a lot to do with his constant use of the television, but who knows?

I really like chili, even without beans, but I always used to eat it over rice and now I'm having a hard time feeling like my chili meal is 'complete' without it. Cornbread was always tasty too. Perhaps cauliflower rice would give me what I mentally feel is missing?
