Current interests - Starting Strength (reading it very slowly)
Had a good "sun bath" today.... nice sunny day. Gorgeous. Temp in the mid 70s.... Got in a good run, and mulched most of the flower beds.... good shoulder work out... and sweat.... The sun felt good on my bare back.
I picked up a kabocha squash at the store the other day. I have orange and green kabocha squash growing in the garden, and I have never eaten one, so I picked one up to try. I also got a Sweet Dumpling squash. I baked them both today. I think I like the kabocha better than the sweet dumpling. The kabocha has a denser, more "potato" like consistency... and it's sweeter. Very tasty. I took a 1/4 of the squash and added just some clarified butter to it.... wow, was it tasty! I can't wait for mine to ripen now! The sweet dumpling has more of a "squash" flavor and isn't as sweet as the kabocha.
So for breakfast today I had 3 eggs scrambled and I took about a 1/2 cup of kabocha squash and mixed in an egg to thin it out and I pan fried it. It was pretty good. Tasted like a potato pancake, but a little sweeter. I also had yogurt for the first time in a month. As is my usual habit, I added a 2 teaspoons of strawberry preserves to the yogurt. Of course I lick the spoon.... and WOW were those preservs sweet! Almost too sweet to eat, and the yogurt was alot sweeter than I remember it being.... Next time only ONE spoon of preserves!
