I've cooked in a number of different restaurants and they all use vegetable, canola, or soybean oil for cooking as well as salad dressing. The only one that doesn't that I know of is Carrabba's. They cook in olive or butter, except for what is deep fried. The meat in these places is the lowest of grades with again the exception of Carrabba's. Typically the name of the game is what can get for the cheapest
