I used to be unable to digest starches, once I got autoimmune inflammation in my eye (uveitis, often associated with spondylitis) after eating some undercooked sweet potatoes after months of VLC. I almost went blind in that eye, checked into the ER first time ever, had to take two medications! So I knew I needed to fix my gut. Then I found the resistant starches thread, started eating tiny amounts of cooked, cold potato, and slowly upped it. Within...was it two months? I forget, but now I can eat all the starchy things I want. Plantains, green bananas (not that I'd waste them, they're better rotten and black), sweet potatoes, etc. And no more diarrhea unless I overdo my magnesium once in awhile, lol.

Steak, eggs, potatoes - fruits, nuts, berries and forage. Coconut milk and potent herbs and spices. Tea instead of coffee now and teeny amounts of kelp daily. Let's see how this does! Not really had dairy much, and gut seems better for it.
