Pumpkin Bake
Mash up some cooked pumpkin ( I boil mine to cook), cool a little, add a beaten egg and lots of grated cheese. Put into a baking dish, sprinkle with grated cheese and bake until golden. Actual amounts don't really matter, just add cheese to taste and if it's a big bake use two eggs. This is also nice with pesto stirred through.

Mix all in a microwave bowl and throw in for 3 minutes. I don't really know what to call it but its damn good. Kinda like a custard thing but not. Also good if you mix it some meat. Or cover it in whipped cream.

Robb wolf posted a pumpkin spice latte recipe awhile back.

Something along the lines of melting pumpkin, coconut milk, vanilla, nutmeg, cinnamon, pumpkin spice together..... Add into coffee.

This has been my fave the last few wks since I'm mid whole30 and want a pumpkin spice latte from the dreaded starbucks so badly

Primal Cottage Pie with pumpkin on the top instead of potato. In a pan cook ground beef or lamb, carrots, onions, tomatoes, salt and pepper for the base, then just cook and mash some pumpkin for the top. You can bake it if you like but I didn't bother with that step because it is already cooked. Crispiness = delish though.

I also like a bowl of mashed pumpkin with red palm oil mixed through. Or stick some pumpkin in a pan with some ground beef to make some meaty mash.

Also pumpkin and beets baked in a little olive oil and vinegar on a low temperature and covered is divine.

My parents keep me well stocked with pumpkin from their garden for most of the year, but I rarely get sick of it.

I've been wanting to try pumpkin 'ice-cream' with frozen bananas and cooked pumpkin.

Add another egg or two to this combo, and you have the consistency to make pancakes. MMM!

Also, pumpkin soup -- 1 cup puree, 1 cup broth, 1 lb. bacon, 1 white onion, mix all together and simmer on stove top or throw in crockpot. Also, add meatsballs using ground pork and turkey. My fave!

Or, try roasting a small sugar pumpkin (lop off the top and take out seeds) Use the pumpkin as a bowl and add sautteed ground beef, onion, garlic and caulirice, maybe spinach, too. Haven't tried this one yet, but I'm planning on it!

Or mix pumpkin with coconut butter and cinnamon and microwave until creamy. Sprinkle with coconut flakes for a yummy dessert.

Or make a pumpkin pie with unflavored gelatin and a nut crust. There are tons of recipes out there.

Can you tell I share your love of pumpkin? I roasted and pureed a ton of sugar pumpkins from my garden this year, so I have about 50 bags in my freezer ready to go! Mmmm!

also you can combine pumpkin puree with egg nog and protein powder for a mega treat (note: I said treat. Enjoy sparingly... unless you make your own low carb nog.)

@ Dr. Bork Bork ... I do something similar, only I use heavy cream so it doesn't add any carbs
