    Thanks to Leida, I have milk and kefir grains sitting in a pan on the stove, beginning the process of becoming cheese. I'll let everyone know how it turned out.

    Not sure how paleo this is.

    If you freeze a carton of buttermilk then cut it open, place frozen contents over a colander/sieve covered with some muslin or cloth over a blowl and leave overnight it will defrost and you will have whey below and a sort of quark/fromage frais on the top.
