    Baked Cod With Sun-Dried Tomato Pesto

    Hello folks. I thought I would try my hand at posting a recipe here. This is one of my favourites, it is delicious, and it takes literally seconds to prepare. I have put it on my blog here: where there's some photos etc and you can print from the WordPress plug in thingy that I have used. Please note that I am an utter noob at all things wordpress/blog. So this is an experiment for me as much as a means to share one of my favourite simple recipes. Here's the recipe:

    Baked Cod With Sun-Dried Tomato Pesto
    Preptime 5 minutes
    Cook time 40 minutes
    Total time 45 minutes

    Ingredients
    1 sprinkle Parmesan/Grana padano (Use a large sprinkle.)
    1 splash Olive oil(And a good splash at that.)
    1 handful Nuts ((I'm using hazelnuts today))
    1 clove Garlic
    4-5 Sun-dried tomatoes

    Note
    Some variations to try - instead of sun-dried tomatoes, use basil or rocket for a traditional green pesto. Pine
    nuts are commonly used, but it works brilliantly with walnuts, macadamias or almonds!

    Directions
    Step 1
    Add all ingredients to your food processor and whizz until you have a course puree.
    Step 2
    Place the cod on a foil covered baking tray.
    Step 3
    Spread the pesto generously over the cod.
    Step 4
    Put the cod in the oven at 200 degrees centigrade (400 Fahrenheit) for 40 minutes.
    Step 5
    Eat any leftover pesto with a spoon and marvel at the incredible flavour!

    Yum! I'm going to try that. I typically do baked cod with lemon and onion. This will be a nice change.
