I love mixing coconut oil in with nut butter. It somehow makes it sweeter.
I had a few things at work here yesterday to snack on, and darn if I didn't forget my coconut oil bars. So I made something up.
2 T coconut oil
1 T cashew butter
1/4 t vanilla
2 drops stevia
Heat in the microwave for 1 minute, max. Blend in a coffee mug, and pour into a muffin cup liner couched in another mug. Freeze. Holy moly -- it's like a white chocolate Reese's cup, without the nastiness in it.

I make variations on this for dessert all the time. I like using Sunbutter, as it tastes so close to peanut butter, and also adding 100% cocoa powder. I usually do honey as sweetener, and sometimes add coconut flakes on the top, or shredded coconut mixed in. The combinations are endless!
These are awesome, aren't they? I do a coconut oil bar very similar to your recipe. But I was tired of chocolate all the time, and I can't eat sunbutter right now due to the sugar. So this was my next trial. Cashew butter is awesome.![]()
Ooooooh. I can't do the vanilla, as I found out I'm allergic. But a white chocolate Reese cup? That sounds deliciously dangerous.
If Sunbutter tastes like peanut butter I MUST FIND SOME! And I have yet to try cashew butter. A friend made pecash butter and it was OMG AMAZEBALLS. The pecans actually made it taste like it had maple syrup in it. I freakin' love pecans, O6 levels be damned.
