    Oooh...I was just to the doc for the first time in 3 years! I had some blood work done too. My BP was higher than usual...I was pretty low at 100/60 but today was 117/68.

    I do this exact thing! Blend one can of Trader Joe's coconut cream in the blender and store in a Tupperware in the fridge. A can lasts me a week. I use it in my coffee and yes, over berries.

    Reporting back with fat bread mini muffin results:

    They still take 35 minutes to cook, and they taste like slightly nutty bread.

    Also taste tested by bread loving Adventists who were pleasantly surprised.

    Forgot to add: It made 24 mini muffins with the cups very full and a little batter left over. Next time I will try filling them a little lower and see if I can stretch it to 36 and use all the batter.

    I did the fat bread muffins in my 6-cup silicon muffin pan, and they were done in about 25 minutes (at 350F ? I think), and turned out really, really good.

    Yeah, this. I get "white coat fever" something chronic when at the doctor's (I have no idea why - I guess I just rarely go to the doctor so it's a novel and slightly disconcerting experience). Last time I went I warned her of my little issue so she took my BP several times over the course of the consult - there was a significant difference (improvement) between reading no. 1 and reading no. 3!

    There's been a huge taste and texture variance in the brands of coconut cream I've tried over the last few months. All are supposedly just pure coconut extract. Some are awful and don't blend nicely - they leave my smoothies a bit gritty/waxy. My favourite (currently not in stock anywhere I can find - arrggghh) has a lovely mild flavour and nice creamy texture. Almost makes me want to eat the stuff neat, which is unusual - I need to blend with a few berries or something else to counteract the flavour of coconut which is not my favourite thing, despite the benefits of the stuff. And of course, coconut + Thai flavours/curry = delish!
    I have the simplest tastes. I am always satisfied with the best.
