Best Balsamic Vinaigrette Ever!
I've always had issues with making salad dressing. It was like my achilles heel in the kitchen. But today, I conquered it and had the most delicious salad ever! This is a very basic recipe but sooooo yummy!
I made this with my beloved stick blender and the handy-dandy measuring jar it came with. I layered the ingredients in the following order:
1 clove of garlic
1 tbsp Dijon Mustard
1/4 cup Balsamic Vinegar
1 tsp Agave Syrup
1/2 tsp Dried Basil
pinch of Salt, Pepper and Red Pepper Flake
1/2 cup of Olive Oil
Put your stick blender all the way down in the jar as far as it will go and turn it on. Don't move it. You'll see the emulsion starting (Kitchen Science: The Coolest of the Sciences!) and when almost all of the oil has been emulsified, you can start lifting the blender up.
I had this on some delicious Alaskan Grown red leaf with tear drop 'maters and bleu cheese crumbles. Num, num, num.

Yes they do! I found the most amazing mayo technique ever involving a stick blender and from that I made the most amazing mayo ever. I could seriously eat it with a spoon. Here's the technique. And following is my recipe.
2 large eggs (I pasteurize mine)
1.5 tsp salt
2 tsp dry mustard
1/4 cup white vinegar
2 cups Walnut Oil (I don't like Olive Oil mayo)
