This works great as a dip for celery, carrots, etc. And it's also a yummy salad dressing, just add a little milk/almond milk to make it "thinner" to pour on a salad, if you want!

c plain yogurt
t cumin
t coriander
1 T extra virgin olive oil
1/4 cucumber, grated (with skin) and juice lightly squeezed out
2 T fresh mint, chopped
coarse salt and freshly cracked black pepper
1-2 T fresh lemon juice
