Freezing in glass jars is a great idea! It's best to get it out of the can once opening, I believe it stays fresher longer that way(?). I like to reuse glass jars (like pasta sauce, etc) for any various food storage/freezing like that. But yes, I've stored Thai Kitchen organic coconut milk in the fridge for up to a week and had no side effects, aside from it thickening up to the most delightful spoon-licking-worthy cream
