    I'm not sure if you're joking. I'm not saying you're completely wrong either. If the carb curve comtrols your hunger then you won't eat so much bacon. So yes then you can "eat as much as you want" which wouldn't be an extreme amount.

    TJ's has 0 sugar! Yay!
    Steak, eggs, potatoes - fruits, nuts, berries and forage. Coconut milk and potent herbs and spices. Tea instead of coffee now and teeny amounts of kelp daily. Let's see how this does! Not really had dairy much, and gut seems better for it.

    Really? That's awesome - a TJs just opened near me this week.

    I've been eating Applegate Farm's Sunday Uncured Bacon. I stopped this week because I'm doing Whole30, and AF adds a bit of sugar (cane sugar, I think). I just ordered Whole30-approved uncured bacon from US Wellness Meats -- just pork and sea salt. I haven't received my order yet; I'll let you know how it tastes after I've made my first batch.

    I live near San Francisco, and Prather Ranch makes a sugar free bacon that is cured in salt and celery salt. It's really wonderful. The sad thing is that you either have to head to the ferry building or find it at one of your farmer's markets to buy it.

    My standard PSA - most "uncured" bacon is usually "preserved" instead with celery salt or celery juice, and studies show they actually have more nitrates than standard bacon.

    If that's not an issue for anyone, then great. But it does cause issues for some that are sensitive. I just don't want people thinking the uncured bacon/sausage/hot dogs are nitrate/nitrite free.
