    Fermenting store-bought Yogurt Further

    Hopefully you all can help me:

    Can I leave store bought yogurt out and ferment it further? Will it spoil or just continue the fermentation process? I want to increase the probiotic content to closer to a 24 hour ferment. Will this work, or do I have to go thru the whole making yogurt with a starter process? It makes intellectual sense that this should work, but I don't feel like wasting a tub of nice grass-fed yogurt. Can't easily search this one out online. Thank you!!!

    I would suggest that you use some of the yoghurt as a starter for a 24 hour fermented batch, and either freeze the rest in ice-cubes to use as further starter, or just eat and enjoy it. I fear that the yoghurt would go off if you were to try and ferment it further, as chilling it stops the process. Also, you don't know how long the yoghurt has been chilled for in the shop ...
