"Bolognese" Stuffed Peppers
Came up with these (no pics) this weekend to have for lunch during the week. Id say they are pretty primal depending on your eating style and REALLY good!!
Not a "true" bolognese but had a similar taste.
10-12 red bell peppers
2 large or 4 medium carrots
1 medium or 1/2 large spanish onion
5 stalks of celery
2 poblano peppers
8 cloves of garlic
1 small can tomato paste
6-8 leaves of fresh sage
2 pounds grass fed beef
1.5 pounds whole foods hot sausage (taken out of the casings)
4 ounces pancetta
Either FINE chop all of the veggies or destroy them in the food processor (worked well for me) and set aside. In a large sauce pan, render down the pancetta so most of the fat gets released. Add all of the veggies and slowly saute' for about 10-15 minutes. Add some salt and pepper at this point, along with the sage, fennel, and basil.
After those have soffened, add the ground sausage and brown for a few minutes, breaking it up and such. Add the ground beef and season again with salt and pepper. Repeat the same with the beef until all the meat is JUST starting to brown and losing its pink. Add the tomato paste and cook out for a few minutes. Set aside to cool...
Prep your peppers which im sure everyone knows how to do. Stuff them suckers full and bake @ 375 for about 35-40 minutes.
NOTE : there is a good amount of fat in the meat mix but i kept most of it because it had great mouth feel. Also its not as "firm" as regular stuffed peppers with stuffing or rice but its a nice lower carb dish.
