    I just made my first too! To be honest, this morning when I took it out of the fridge I put little plastic baggies on my hands because I just couldn't bare to touch it while I rinsed it off... Plopped it in the slow cooker for about 6 hours (it was only 1.5 lbs) and just finished cleaning it. For some reason I wasn't bothered by it at all once it was done cooking - taste buds and all but before hand was another story I was surprised about the 2 layers of skin - the outer one practically fell off - the very tongue looking one (the bottom side of this layer was black in color for the most part). Under that was a white layer that also seemed to have small bumps like taste buds on the top of the tongue, but was just smooth on the bottom of the tongue. It seemed as though this could be eaten, but I wasn't sure. So, I took it off too - I lost more meat than I would have liked though as I used my filet knife to do this because this layer didn't seem to stay together very well - as in no peeling potential. The dog enjoyed it though.
    Once the meat was cut up into slices for tacos later I suspect fiance will have no idea he isn't eating "regular" beef. I'm excited to have found a $2-3/lb source of pastured beef!

    Thank you for your super descriptive post. The hardest part of trying new offal is knowing what to do to it, what parts you have to remove and how you might cook it simply.
    Female, 5'3", 49, Starting weight: 163lbs. Current weight: 135 (more or less).
    I can squat 180lbs, press 72.5lbs and deadlift 185lbs

    you can actually eat the whole tongue...even the chewy skin, full of collagen. Just toss that tough skin that peels easily.
    Would I be putting a grain-feed cow on a fad diet if I took it out of the feedlot and put it on pasture eating the grass nature intended?

    Fiance wouldn't touch it. He ate turkey hot dogs. I am somewhat bothered by the fact that, to the typical American, tongue is "grosser" than a hot dog. But, that was me a year ago, so I guess I have to keep my pie hole shut

    No mention of that second layer though. Mine did not look like this one when I peeled off the outer "skin". There was definitely a white layer left - not just meat-like tissue.

    Oooo good one. Choosing a hot dog over the tongue. I'm going to have to use that one as a come back line

    They had tongues at the market today. Oh man they are HUGE. I could practically feel the thing licking me. I just didn't have the courage. Maybe next time. I got tails and bellies instead.

    Quick question on this: Does anyone save the skin/tastebuds/other cast-offs and use them in broth later? Or do you feed them to the dog?

    I'll eventually try beef tongue, I will, I promise. However, I have been around cows all my life and have seen them do this too much:
