That question feels like it belongs in the 1990s. I'm sorry, I'm not meaning to be mean or snarky (well ok, yes, I will own up to my snark). Why do a home version of "Rice Dream ice cream", when you can go for the gold (was watching the London Olympics earlier) & make decadent full fat, hell screw that, full fat double cream REAL ice cream? Rice ice cream is sorta chalky & blah tasting, unless its loaded up with sugar & some sort of fat.... this is an old memory from when I did make it, as I said, in the '90s.

Always sounded awful to me. You'd have to add something to give it a consistency other than rice milk ice cubes. Unless you can't have dairy I'd just make the real thing with whole milk and heavy cream. For quick and easy I make raw goat milk creamsicles. You don't even have to measure. A couple large tablespoons of sour cream, pour in the goat's milk, some vanilla, flavor if you're gonna add it, sweeten to taste with stevia, although frozen things should be slightly sweeter as they tend to taste less sweet. Pour into popsicle forms, pop in the freezer and their done in a few hours. Usually have to run under hot water for a couple of seconds to loosen them.
