I made this chutney last night to pour over pork chops. The original recipe called for 1/2 cup of sugar, but I left it out all together and it was still yummy, though I don't know if you could can/preserve it without the sugar. But for immediate use it was fine.
I took a tablespoon of olive oil and sauted 1/4 cup chopped onion, added 2 minced garlic cloves, a 1" piece of grated ginger, fresh ground pepper and some salt. Sauted for maybe 2 minutes. Then I added 1/4 cup cider vinegar and 3 chopped peaches. sauted for 2 minutes, then added 1/4 cup of water and let it cook and thicken for 20. Served it over a grilled pork chop.
I'd say it makes at least 4 servings. Very yummy. It was based off a Bon Appetit recipe.

LOL, I edited that.... GINGER, not finger. The ginger kind of makes it. A finger would be kind of gross.
I wonder how this would taste sans ginger. I dislike it ever so much.
