    Ater a successful render age of some beef fat last night I have a glorious dish of white fatty loveliness.

    So, pray tell, how long will it keep for, covered at room temperature?

    As long as it takes you to eat it. There's nary a more stable fat.

    Or if it's anything less than perfectly pure, it'll still last a few weeks in the fridge.

    I pour it into medium-sized jars and freeze most of them, leaving one in the fridge at a time. Still too chicken to leave it out.

    We just put ours in the cupboard. It's rare that it lasts more than a couple of weeks before it's all gone though. I would imagine that it would easily last for a couple of months.
    Disclaimer: I eat 'meat and vegetables' ala Primal, although I don't agree with the carb curve. I like Perfect Health Diet and WAPF Lactofermentation a lot.
