I pour it into medium-sized jars and freeze most of them, leaving one in the fridge at a time. Still too chicken to leave it out.

why leave it out? refrigerator! well, either way, let your nose be your guide on this one.
We just put ours in the cupboard. It's rare that it lasts more than a couple of weeks before it's all gone though. I would imagine that it would easily last for a couple of months.
Disclaimer: I eat 'meat and vegetables' ala Primal, although I don't agree with the carb curve. I like Perfect Health Diet and WAPF Lactofermentation a lot.
