    Allergic to only some specific cheese products?

    I have noticed I get an allergic reaction (throat starts feeling itchy) from some specific cheese products. For example Appenzeller extra and aged Emmental seem to give me a bad reaction. Afaik I'm not allergic to dairy but I do have egg allergy, though I'm not sure if it plays any role in this. Any idea what could cause this allergy?

    Cheeses tend to have specific bacteria and mould strains that give them their distinctive tastes. Could be that you're sensitive to one of those?

    I would also suggest some sort of mould or a higher concentration of casein perhaps. Emmenthal is quite a dense cheese, might well be concentrated ie more milk used per oz.
