I love these quick, few-ingredient but yummy recipes!
At this moment I am enjoying a hot bowl of soup that I make with only 3 ingredients. It began as a recipe for zuppa toscana, an Italian soup, and I simplified it as follows. Less fuss but still delicious! I just call it sausage chowder.
Ingredients:
1 lb sausage (I use the tube kind in a plastic wrapping)
6 cups chicken broth
8 oz (I just eyeball it) heavy cream
1. Brown the sausage in a pot for 15 or so minutes. Drain most of the fat but keep a little.
2. Add chicken broth. (I just throw in 6 cups of water and 6 bouillon cubes) Bring to a simmer for a little while.
3. Add cream. Stir and simmer a little longer. Done! The sausage fat seasons the whole thing so I don't add spices. Feel free to add your own.
I did not feel like cooking anything today and so I made a pot of this. It's so easy it's hardly cooking. Add spices or whatever you want, or un-simplify it back up to zuppa toscana, but for those of you who like REALLY simple recipes, it doesn't get much more basic than this.
My groceries might cost less than yours since I get to shop on an Army post, but the cost for this (for me) is about $3 or less for the whole pot. Cheap and filling!

I'm actually having something similar tonight. Sausage,broth, coconut cream, and some kale. Sausage and broth is a heavenly combination!
