think about coconut milk & all its goodness in the same context as dairy. Cream (fat) whips. Milk doesn't.

Yeah, don't do that if you intend on purposing it for whipped deliciousness. Just set it in the fridge, unshaken, and let it chill out over night. Then scoop the fat and whip it.
Shake it if you are going to use it for anything else.
