    Paleo chicken finger recipe?

    Can anyone recommend a kid-tested/kid-approved paleo (or primal) chicken finger recipe? I made a batch tonight, with mixed results -- Loving Husband thought it was OK, I liked it, and the kids suffered through it. The dry mix used 3 T coconut flour, 1 T almond flour (it was supposed to be almond meal, but I didn't have any), 1/2 tsp of black pepper and sea salt, and a pinch of cayenne pepper; then dipped in egg; then coated in unsweetened coconut (medium shred). Fried on medium heat in coconut oil.

    If anyone has a chicken finger recipe that they swear by, I'd be grateful. Many thanks in advance!

    I have done pretty much the same but without the cayenne and coconut. Liked very much by housemate's granddaughters who normally live on SAD junk.

    Well, you can make chicken kebabs with pretty much any sauce you like.

    Kids seem to love kebabs. Even fruit kebabs.
    Disclaimer: I eat 'meat and vegetables' ala Primal, although I don't agree with the carb curve. I like Perfect Health Diet and WAPF Lactofermentation a lot.

    Not tested yet, but I can't see how you can go wrong... Bread your chicken with either crispy bacon crumbs (made in the food processor) or same idea with pork rinds.

    I make my own vegetable crisps/chips, using a mandolin to slice the vegetables, and olive to cook with (brushing the oil over the vegetable slices, then baking until crispy in a medium oven), then sometimes I bash the crisps to make crumbs, and use those and some herbs - generally thyme or tarragon - to coat the chicken. Goes down a treat every time, but it is hard work to make.

    Pork rinds. Totally. Not kid tested but my non-primal boyfriend likes most anything fried in them, especially fish. Pulverize pork rinds in food processor. Add a sprinkle of paprika, garlic powder, onion salt and oregano. I never measure but if I were to guess, 1 bag of Baken-ets and maybe 1/2 tsp of the spices, maybe a touch less of the paprika. Thing about pork rinds is that they can be a bit goopy, so adding a little coconut flour or flax seed meal can help. Dip the chicken in a wet batter of egg, I add a splash of cream to mine, then roll in the 'breading'. Best oil to fry them in, I've found, is lard. Not sure if coconut oil can take higher temps but it's best to fry at a higher temp to get a good strong coating. Too low and it gets mushy.

    I made these last night and they were a huge hit, even with the 4 year old. Will definitely be a new staple.

    The secret to making great chicken is to coat with your 'flour' then dredge in egg then coat again and fry in a pre heated pan with little oil.., For my grandkids I use white rice flour or potato flour. I preboil the chicken so that it is cooked and I only need to fry it to develop the coating. It is perfect every single time.

    I make my chicken fingers with crushed up rice crackers (not sure if its paleo approved) and add same spices, but also garlic powder and italian seasonings, pepper etc. I dip them in ranch dressing ( paleo approved?) and bake it for 20 min at 350. this recipe is for my kids.....they are not paleo eaters yet....almost but not yet.
    But I tell ya....they are gone in minutes and its a for sure meal that they will eat. Also I mix up grated fresh parmasean cheese in the mixture as well, it adds so much flavor.
