The Hail Merry raw macaroons are a favorite treat of mine, but a little sweet and kinda pricey. So, I made my own today.
1.5 c shredded unsweetened coconut
1/4 c coconut flour
1/4 c coconut oil, solid
1 tsp pure vanilla extract
4 tsp grade-B maple syrup
These are rough guesstimates, as I didn't bother to measure the dry ingredients. I first whisked the shredded coconut and flour together and broke apart the clumps, then added the rest to taste. Form into packed balls on a spoon, and place on parchment paper. Freeze 15 minutes. <NOMNOMNOM>
Next time I make these, which will be in the very near future, I'm going with 6 tsp maple syrup and a pinch of sea salt. These would be nice with almond flour or cocoa powder as well.
