I slept a bit over 8 hours last night.Up, put pork in slow cooker (salt, garlic, paprika), drinking coffee starting my day. I plan on sautéing spinach, mushrooms and onion and using up the last of the baby potatoes (cooked in butter in oven). I've got two sweet peppers also that may go into the sauté or will be sliced into strips and go with me tomorrow for snacking. Today I will do a last load of laundry, pick my outfits, get my toiletries ready, and set out my approved snacks to pack. I also must spend about 4 hours working on stats.
I also want to do about 5 minutes of shovelglove. I'm hoping to get in my walking each day of the trip and to LHT at least twice.

Pork smells great. Made veggies. Ate none of it. I ate the entire avacado with fresh lime juice and sliced cherry tomatoes with balsamic vinegar. It was yummmy!I'm cooking the potatoes and will leave them in the fridge with the rest for the dudes to eat. Also left a dozen hard boiled eggs.

I have to make my avocados last for some time as I can't eat much of one at once. They're so good but awfully filling. I cube the remains, squeeze lemon or lime and some salt on, toss it well, push plastic wrap right down on it. Keeps for days and days. I just remove what I need and put some more lime juice on.

Slept really good. Up, relaxing, having CWHWC, getting ready to finish packing, and get ready for trip. Biggest thing left to get ready is to cube up leftover roast and ziplock bag it, slice up two red peppers and ziplock bag them, and put both along with some salami slices and fat bombs in an insulated lunch bag with a cool pack to add last minute to suitcase. I almost always have a TSA paper saying my bag was searched (can't you imagine the dog going crazy for the meat?) when I get to my destination. It gives me a good start on lunches for next week.

Got in, windy and blowing dust. Plane was late, so canceled dinner with sons. Will meet them tomorrow instead. Picked at some cheese and celery in the lounge with some water. May go get a glass of wine in a bit. Planning an early night. Long day tomorrow.

Slept about 6 hours, up, drinking coffee, getting caught up. Packing some roast beast, cheese, raw veggies for lunch. Since I'm up early am thinking about getting some eggs and bacon for breakfast. Wearing cherry red cordoroy skirt, blk tights, short black boots, black, red, white pattern sleeveless shell (I'm always hot) and black thin sweater today. Taking the time to flat iron hair (usually it goes in a tail) and wearing it down. I've got a phone conference with my stats buddies, homework to do, and a faculty meeting to chair. This evening I'm meeting 2 sons with their SO for dinner. DS #3's SO is sitting for NCLEX today. Please send positive thoughts.![]()
