    Great ideas Goldie. I could use cornbread for the stuffing - better than wheat I'm thinking. How much garlic do you use with the cauliflower? I love garlic. No one in the family are big gravy fans so the mash has to stand up to taste good alone.

    Kathi, check out this thread for ---> Primal Stuffing --I saw a recipe for sausage/apple stuffing that looked promising!

    For one head of cauliflower, I used two (fresh minced) cloves of garlic. I made sure to drain the cauliflower well before I mashed it, and I added a little almond milk and plenty of butter to get the right consistency. Hubby agreed that mashed cauli is LOTS better than potato mash!

    Thread is great. Will get cauliflower and try mash, sounds yummy.

    So for trip next week, I got a mini crock pot. Room comes with microwave and refrigerator. I can do chicken in the crock pot and serve plain with a sweet potato or on a salad or shredded with eggs. I will not have to count on eating out, which is great!

    Slept great. No headache this morning. have got to write the 1-page review today, as its due by midnight. I'm such a procrastinator. I need to figure out what I'm going to pack clothes wise tomorrow. I've got a list of school and eating stuff going already. Hair appointment this afternoon to cover the grey. Set out grass fed NY steaks for dinner. Got to use up the kale and I've got some fingerling potatoes for the boys and a sweet potato for me. So I get to be lazy for another hour, then I need to get moving.

    Did laundry......

    Made GYN appointment.

    NY steak - grass fed, 1/4 sweet potato with butter, broiled Brussels sprouts, sautéed kale, and sautéed onions in butter for dinner. YUM! Now a glass of red zin while DH does the dishes.......

    Was up for an hour and then back to sleep. Some homework, pack, and then neiborhood night out tonight. I need to make something to take. Maybe deviled eggs.....

    Neiborhood night out was fun. Met many new people. There was a lot of food and I managed to avoid it all! I took deviled eggs and they were a hit. It got cool (down to 69) and breezy. I had the rest of my sweet potato before I went. Mostly packed - need to pack my clothes (they are set out) in the morning.

    In Provo. Checked into hotel, groceries bought, chicken started in mini crock pot, dinner of steak, beet salad, cauliflower. Case studies graded for my students.

    Salad fixings prepped. Tomorrow I need to put it all together with chicken and I will get some hard boiled eggs from breakfast spread. I got some chicken-apple sausages and Greek yogurt too, so I should be good for all meals, including some dinners!
