    sweet potato salad recipe? - cold

    Primal Blueprint Expert Certification
    looking for a good recipe .. ive seen a few online and would prefer everyones opinion here ...

    anyone have a go to for this? i want to perfect something before my local group here has a picnic, and im thinkin ill try to make some tomorrow while i make some pulled pork or brisket or somethin ..

    steam sweet potatoes (2 cups cubed) so they still relatively crisp. Chill.
    Add 1 v. finely chopped stock of celery, 1/2 red pepper and a couple tbsp of purple onions (all chopped very fine)

    dress with: 2 tbsp sesame oil, 1 tbsp (or to taste) soy sauce, 1/2 tsp vinegar and 1/4 tsp squeezed ginger juice + red pepper flakes to taste.

    sprinkle with toasted sesame seeds before serving.

    Caribbean Sweet Potato and Black Bean Salad | Willy Street Co-op This is pretty good, though I would cut down on the red onion (then again, I guess the onion that I used was HUGE) and the apple cider vinegar over powered my version.

    I used oven roasted cubes of sweet potato, cider vinegar, honey, toasted pecans, dried cranberries, salt and chopped cilantro for the last batch I made. It was for a birthday party potluck and was a big hit.
