Hot Peppers? A Lot of Them?
Hi, good folks, I was going to make a spray for my plants, and bought a bunch of medium sized (2-3 inches) hot green peppers. I was wondering if anyone had a good recipe idea to use them up? I can only use 1/2 in a huge bowl of salsa! So, something like stuffed hot peppers maybe? Or can one pickle them?

I like to core out the seeds, stuff the peppers with cheese (if you can eat cheese) wrap the pepper in bacon, secure with a toothpick, and then roast them on a grill or in the oven. The peppers tend to sweeten a bit but watch that you get all of the seeds out. I have a pepper corer that works well. Or you could cut them in half lengthwise, fill, wrap and roast. I use chopped up peppers in my omelets in the morning. You can also stir-fry them with other veggies. Peppers are wonderful. You can also dice them, freeze on a sheet tray in a single layer and throw them in your freezer. When you want a little spice in your eggs, throw in some of the frozen peppers.

Thank you for the suggestion, I think I am going to try a few roasted like this, and then freeze the rest. Duh, I freeze the bell peppers all the time, but did not realize I could freeze the hot ones too.
