I came up with this nice little snack today! Hopefully you will enjoy it and perhaps improve on it.

Ingredients:

1 Tomato (your preference here, but bigger tomatoes will yield larger slices)
1 Can of sardines/brisling (various options here, I went with normal canned brisling)
1 tbps Mayonnaise/Miracle Whip or something similar (Mayo is not exactly primal but I think the damage can be mitigated by choosing ones made with olive oil or a more natural substitute)
1 tsp Paprika
Salt and Pepper to taste
Extra virgin olive oil
Fresh raw walnuts

Directions:

1. Wash and slice your tomato to your desired thickness. Each slice will serve as a "cracker" to put the sardine salad on. I got about 6 slices out of a medium-sized tomato.

2. Open the sardines and mix with mayo in a bowl. Add some pepper if you'd like. Feel free to add any spices/herbs you think might go well here.

3. Arrange the tomato slices on a plate and put a dollop of sardine mix on top of each one. I put some salt on top of the tomatoes before I laid the paste down.

4. Drizzle with olive oil and serve with a handful of walnuts or whatever you please.
