Homemade tomato powder for bsckpacking
I just tried to dehydrate tomatoes in my dehydrator for grinding and making into my own tomato powder. We go backpacking and a number of freezer bag recipes call for it, and I just couldn't bring myself to use whatever over-processed stuff they sell. So I dehydrated some beefsteak tomatoes DRY and then ground them in my spice grinder, and they became gummy, not powdery. Should I coat them in something? My husband HATES coconut, so please don't recommend coconut flour. While it's a grey area, I was thinking a little bit of tapioca flour? Any other ideas. I still have some tomatoes that I haven't ground yet.
