Whole Roasted Chicken with Lemon
I recently bought a beautiful chicken from the farmer's market.
I sliced lemon and placed it under the chicken skin and underneath the chicken.
I rubbed under the skin, coriander, cumin, lemongrass and diced garlic.
I roasted that chicken, cut it up, and served the lemony sauce created by the melted fat and lemon in the pan, over the sliced chicken.
It is so easy and so decadent. I even served it on our wedding china- you know, the sacred fancy cream and burgundy "Old British Castles" china.
This sounds so BOO-TIFUL! Love the idea of lemon slices under the skin. Wicked!
