I don't always eat grease. If I am cooking ground beef or bacon, then I will eat up some of that grease. If I am eating roast then I will choose the fattiest parts. It is not like I am scarfing down grease by the gallon. Using grease adds lots of flavor to otherwise dull food. Most people used to have larders, and lard is only hard grease. Grease is not dirty. Lets give a primal cheer for grease.
