    I have to agree with the crockpot idea. Crockpots are cheap (no, seriously cheap) and you can just toss a piece of meat in them with a little broth and some spices (whatever you want), then set it to "low" before you head out the door to work. Come back at the end of the day and it's super tender meat with no work. Cook some extra and there's lunch for a couple of days.

    Another one I rely on a lot is just cooking up a hamburger patty (grill, pan, whatever is easy) and topping it with a fried egg or two. Super simple and really good.

    Another one (if you're eating dairy) - season a boneless chicken breast and cook it in the oven at 350F. When it's done (165F - I use a probe that has a lead out the oven door - also super cheap and keeps me from screwing up), put a slice of provolone cheese on it and put it back in the oven for a minute or two. While the cheese is melting, slice an avocado, then take the chicken out of the oven and cover it with the avocado slices. It's actually more complicated to explain than it is to just do it, and it's my (non-Primal) boyfriend's favorite dish.

    Simplest paleo dish on the planet: Paleo Spaghetti. 1 spaghetti squash, 1 lb ground critter, 1 jar paleo-approved marinara sauce. Cut spaghetti squash in half, bake at 350F for 45 mins, remove from oven. While it cools, brown your ground critter, add sauce to warm. String out your squash, combine with meat & sauce. Voila! Dinner.

    Southwestern meatloaf:

    2lbs ground critter
    1 jar Mexican salsa

    mix together thoroughly
    form into a loaf shape and place in a loaf pan
    bake at 350 for about an hour

    you can put bacon strips on top if you want to get fancy about it.

    My new favorite goto for the week is chicken breast/ chicken thighs marinated from frozen. Do it the day before and let them thaw In the fridge. I also pound them flat before cooking on the grill or in a dish with the marinade as a sauce. You can even do two ziplock bags at a time and throw the second one back in the freezer for next week.

    4 breasts
    2 tb vinegar
    2 tb oil
    1 tb mustard (any kind)
    1 tb each of garlic and onion powder
    1 tb of herb (thyme)
    Salt and pepper

    Even easier, believe it or not: cut the spaghetti squash in half, scoop out the seeds, put the 1/2 squash on a microwave-safe plate, and nuke on high for 8 - 10 minutes. Then use a fork to scoop out the squash (which makes it form the "spaghetti" strands).

    Dice Monkey, I'm in Fredericksburg too. More accurately, Spotsy County, but with a Fredericksburg mailing address. Do you ever go to the farmer's market at Plank Road and Gordon Road? There's also a store near the Spotsy courthouse that sells meat, eggs, and produce from local farmers.
