Never microwave with plastic.
Today, I packed a saran-wrapped sweet potato and poked holes in it. I packed a bitty dish of coconut oil, sprinkled with garlic salt. I microwaved the sweet potato for 6.5 minutes, unwrapped it, and spead my coconut oil and garlic salt of it. Sooo good! Better than the ice cream my co-workers were wolfing down- trust me, it's amazing!

Whatever. That's one of my favorite things to do. You can also just pop it in the micro without the plastic, though the steam will get everywhere (so you might want to wipe out the microwave after). I find for really big sweet potatoes, I do 2.5 min on each side, then cut it open, close it back up, and give it another minute to finish off the center.

as a great addition, I added crumbled bacon and basil to my sweet potato today, for brunch.
Sweet potatoes are my favourite thing, like, ever.
And steak.
When I microwave, I loosely wrap the sweet potato in a damp paper towel. Takes about five minutes. Then I split it open, mash it up a bit and throw on some butter.
I've tried something awesome and new- the sweet potatoes, cooked and slightly mushed, topped with virgin coconut oil and shredded buffalo chicken (basically just shredded chicken thighs with a bit of oil and hot sauce) topped with green onions. I think i could eat this everyday and be a blissful bit**.
