Nice! And tongue is quite soft anyways, I don't think brining it would have made it that way. I had a lightbulb moment the last time I made tongue, I think it's what bologna is supposed to imitate. Except bologna is disgusting and tongue is delicious.

Interesting! My first time eating it, but friends who grew up eating it said it was always tough. It really does taste good.
