I have been eating Bob's Red Mill unsweetened shredded coconut and recently tried some Native Forest coconut milk (the good stuff from Thailand). The NF milk was fantastic on fresh blueberries!!
From what I can read, looks like one form of coconut is about as good as another nutritionally although the oil doesn't have fiber, of course.
What would you say is the best reason to eat coconut and what form would you recommend? Thanks.
