I threw together a bunch of ingredients and came up with a very colorful, delicious salad with inspiration from the sea and Thai-inspired dressing. Enjoy
Sea Salad
2 c. baby spinach
2 c. baby greens (I used baby romaine)
1/8 c. dried Wakame seaweed, soaked in water
3 baby carrots, chopped
5 small peppadew peppers, chopped
handful raw red cabbage
5 oz small chilled shrimp, peeled
1 tbsp sesame seeds
2 tbsp toasted almond slivers
Dressing:
1/3 c. coconut milk
1 tsp. minced garlic
2-3 tsp. hot garlic chili sauce
2 tsp fresh lime juice
Dash of tamari sauce
