    Filling vegetarian meals?

    Primal Fuel
    I don't want to go vegetarian, but I do like vegetables a lot and can get bored of meat so for varieties sake I would like to eat more veggies.
    I can't really think of anything that would be filling enough though so if any of you guys have any recipes/idea to share I would appreciate it a lot.

    Salads with lots of veggies, nuts, seeds, eggs. Runny yolk is so good on a salad.

    Baked potato or sweet potato with broccoli and cheese.

    Omelets, lots of veggies.

    Fruit smoothies; add in leafy greens for added nutrition.

    Nut butter on celery and carrots.

    Deviled eggs or egg salad.

    Potato skins

    Veggie soups of all kinds, cream of mushroom or broccoli

    Guacamole with something crunchy

    Tapioca or potato starch or rice flour or coconut flour to make breads, crackers, pancakes, wraps, etc.

    Stuffed peppers with veggies

    Zucchini spaghetti or spaghetti squash; add lots of cheese to both

    Cottage cheese or yogurt with cheese

    Cheese, olive, and berry platter

    Scrambled eggs with onions, peppers, tomatoes, cheese, dollop of guac, etc.

    Make a vegetable casserole - we used to do this and add bacon but you can leave that out. You'll need a big ovenproof dish. Add any veges you like but watch out for real strong flavoured ones, if you include them they tend to be all you can taste. I use carrots, turnips, parsnips, onion and /or fennel (all sliced), quartered mushrooms, lots of cauliflower, green beans. Lots of people add peas but I don't like them much, and they go mushy. We used to use soup (can or packet) for thickening but I don't do that any more, add herbs and salt & pepper to your taste and some stock but not too much or you end up with vegetable soup.

    Put a lid on and cook on a slow-med oven for 2-3 hours. About 1/2 hour from the end I top it with mashed potato or cauliflower and sprinkle with cheese - whatever is your favourite. Very, very filling.

    Spiralized zucchini.

    Take the strands and either let them sit in a colander for a couple of hours until the water drains out or cook them in a dry saucepan until the water is mostly gone. Then saute them in butter until you first start to see brown. Pile on a plate and cover in freshly grated Parmesan.

    Very good and very filling.

    Pepper stuffed portobello cap pizzas, topped with sliced avocado.
    You'll need:
    Hollowed out portobello mushroom caps
    Tomato Sauce
    Sliced Red, green, and yellow bell pepper (sweet pepper)
    Sliced yellow onion
    Sliced avocado
    Garlic salt
    Chipotle powder
    Olive oil

    Preheat oven to 375.
    Heat up indoor grill.
    Put peppers and onion of grill. Grill until slightly charred on the outside.
    Remove peppers and onions and dice.
    Rub mushroom caps with olive oil (or your choice of fat).
    Fill caps 1/3 of the way up with tomato sauce.
    Sprinkle garlic salt and chipotle power on sauce-filled mushroom caps.
    Add diced peppers and onion to mushroom caps.
    Put in oven and bake for 5-7 minutes.
    Remove caps and add sliced avocado to caps.
    SERVE THAT AWESOMENESS!!!

    *cilantro is also a great topping for this
    *you could add cheese, if you eat cheese

    Vegetarian moussaka. Veggie lasagna (using eggplant and zucchini). Stuffed bell peppers using chopped mushrooms, carrots, onion and garlic instead of ground meat. Loaded veggie soup (with chicken stock for more nutrients?) Top half an avocado with a poached egg and some toasted sesame oil (tuna is good instead of an egg, too.) If you eat potatoes you can make colcannon (I like it with kale instead of cabbage.)
