    Eggplant is one of the best very low carb foods.


    Just tonight I cut it into 3/8" thick slices lengthwise. Brushed with olive oil, sauteed in the frying pan. Sprinkled with crushed garlic, spread shredded mozzarella cheese on top, put in the toaster oven until the cheese melted.


    Yum yum. The old folks liked it, too.

    Eggplant is awesome to use as mini pizza's. Makes for a fun family night if you seutp some thick slices and have an assortment of toppings to add before throwing into the oven.

    I haven't really tried eggplant before. Do you have some more suggestions for cooking with it?

    I love eggplant. I loved the pizza idea! Never thought this!


    In the Mediterrean cuisine there is a huge variety of recipies with eggplant and nearly all of the compatible with PB (below some Turkish recipies):


    Musakka (eggplant, minced meat, onions, garlic, cheese, eggs and lots of mild spices: black pepper, cinnamon, cumin). Cooked in the oven.


    Fried eggplant slices, eaten with yogurt and garlic. Simple and delicious!


    The imam has fainted (I am translating the Turkish name :-) ): very nice during the summer. Whole eggplants stuffed with onion rings, pepper, spices and tomatoes. Cooked in the oven, with some olive oil. To be eaten cold as a starter.


    Split eggplant: The same as the precedent but with minced meat. Should be eaten hot.

    Oh one of my abosulte favorites is grilled eggplant! Cut into rounds, maybe 1/2" thick, don't forget to salt them to "sweat them out" for 20 minutes, then brush with olive oil and sprinkle with salt and pepper. A few minutes on each side on the grill, and you're done. So good! I'm making stuffed eggplant for dinner next week (or split eggplant as murat called it), I've never tried it but it sounds delicious.

    Lassagne, with slices of eggplant instead of sheets of pasta.
