I second the buffalo chicken dip suggestion. I think guacamole is also a good picnic/beach food. You can bring tortilla chips for the non-paleo eaters, and veggies for those who'd like to abstain.

Bring something you'd want to eat...some meat/veggie/fruit kebabs wrapped in foil (and make sure to bring a few extra for yourself). Then you can pick and choose. Surely someone will bring some raw veggies, and maybe a salad or stuffed peppers. It's a weekend at the beach...I doubt anyone will even notice what you're eating so it wont be "faux pas". smh

bake sweet potato chips about 2cm thick, and once crispy sandwich a creamy mixture of tuna, avocado, coriander and lime.

nice fresh fruit, are berries and melons in season? more exotic fruit? sometimes at beach parties you even up craving something fresh and clean amongst the crap!

sangria! red wine, sparkling water (if you cannot bring yourself to have lemonade), fruit and mint. jugs and jugs of it. refreshing for beach and who won't like a different treat.

Rumaki (can use shrimp, whatever besides liver)

    1 1/2 cups teriyaki sauce
    1/2 teaspoon minced garlic
1/2 teaspoon minced fresh ginger root
12 ounces fresh chicken livers, halved
1 (4 ounce) can water chestnuts, drained and sliced
12 slices bacon, cut in half
    1 quart oil for frying

    Directions

In a medium bowl, mix together teriyaki sauce, garlic and ginger root. Place chicken livers and water chestnuts in the mixture. Marinate in the refrigerator at least 2 hours.
Heat oil in a large, heavy saucepan to 375 degrees F (190 degrees C).
Wrap each half slice of bacon around one chicken liver half and a slice of water chestnut. Secure by skewering with small skewers or toothpicks.
Carefully lower skewered wraps into the hot oil in small batches. Deep fry 3 to 4 minutes, or until bacon is evenly brown and of desired crispness. Remove from heat and drain on paper towels.

Maybe you can catch some fresh fish while there, then cook it for anyone wanting to try a whole fish?
