    Elevation Burger

    Today I had lunch at a place called Elevation Burger where they have 100% organic grass fed free range beef and fries cooked in olive oil. It was awesome. I want to make this a weekly treat but I don't want to go overboard so here is my question. If I have to choose to give up one item would it be the bun or the fries. Which one is worse. I can't give up both I'm only human

    Don't give up either if you enjoy them both. Adjust the rest of the day's intake accordingly...

    I'd give up the bun~ I don't get a reaction from fries. Plus, I really like them!

    I'd ditch the bun too... fries seem like the lesser evil.

    But why give up the bun if he enjoys eating it? He did not indicate any intolerance or other reason to abstain in his post?

    Is Elevation burger a nationwide chain? We have a few here in the Northern VA/DC area.

    Yes, it is nationwide (global actually). Currently there are ~30 locations, but expanding quickly.

    Ditch the bun. The fries are way more paleo.

    If you have to ditch one, make it the bun. Although the heat needed to fry the taters is very problematic for olive oil. Personally, for an occasional treat I'd eat both. Just wish they would expand down here to Fredericksburg, cuz they sound very good.

    Olive oil itself actually has a decently high smoke point (plenty high enough for frying potatoes). EVOO has a lower smoke point, but that is because it is a first pressing, so a lot of the flavor compounds remain in it. Those flavor compounds are what burn/smoke at high heat. Plain olive oil on the other hand, doesn't have these flavor compounds because they have been filtered out so it has a much higher smoke point. You can watch them frying the fries in the restaurant and see the oil is not smoking. I also think the olive oil gives the fries a great flavor - to the point where I don't even really like the taste of other fries anymore.
