If you're low carb for quite awhile when you suddenly have a big portion of carbs in one sitting you'll see a spike like that. Do it 2-3 days in a row and your body won't react the same way. It's caused by insulin resistance.
ETA - and also the reason why low carbers are encouraged to carb load for 3 days before a glucose tolerance test.
