Yes, the New York Times has posted a recipe for bacon mayonnaise, and for making foolproof homemade mayo (the secret is a teaspoon of water). Just another use for that leftover bacon grease......

I love my bacon mayonnaise! I make avocado deviled eggs with it. Delish!
So do you use all bacon fat? I just bought avocado oil to try in mayo (so expensive, and a tiny bottle to boot) but if I could stretch that with bacon grease and it not mess up the texture, I'm all for it! Especially since I have a pound of pastured, uncured nitrate-free bacon trimmings that I got for cheap and need to render up.

The recipe I use calls for 1 c. of oil. I only had 3/4 c. of bacon fat so I added 1/4 c. light olive oil and it was perfect.
workin on a batch right now. Was thinkin' tuna fish sounded pretty good, then I remembered the baconnaise. Now I'm thinkin' chipotle baconnaise mixed with tuna and avocado. HAIL YEAH!
