yep.....no aspic for me.....just hardened fat....i will probably use it for seasoning.....tastes really good, there was just too much of it floating on the top
PB, would you mind giving a 'menu' of sorts to achieve deep ketosis....checked this morning and still no ketosis joy for me...i'm beginning to think i would need to go zero carb to achieve this!

Today I had about a cup of coconut milk in my several Crio Brus this morning and on the menu for lunch is 4 oz of camembert cheese (nibbling as we type). Dinner is going to be beef stew, basically meat and veggies but I added a bunch of my pesto sauce to the mix which adds fat.

yikes...that puts me at 30....i've been way overdoing carbs (usually around 50)
almost all of the carb is from vegetables and some fruit (plums), iow....mostly meats, eggs, and SALAD..
so according to my intake today, i had a big bowl of the oxtail soup (with the celery, onion, carrot) and 3 sliced roma tomatoes/olive oil/balsamic....and i'm now at 34 carbs....who knew eating salad could do so much damage!!
i think this will be the most difficult part for me....reducing carbs....i've been off wheat for some time and rarely eat anything 'packaged' but i truly love to eat salads and grilled vegetables (zucchini, bell peppers, onions, mushrooms etc)
i guess dinner tonight will be 2 grilled burgers and that's it!
