    Pancakes and syrup

    Primal Fuel
    I have 2 questions first, does anyone have any good recipes for a primal pancake the coconut ones are pretty awful and I can't have nut flours. Sometimes I breakdown and make gluten free pancakes ( I know they have grains but sometimes you just have to have pancakes )
    Second what about maple syrup I know it is high in sugar but at least it has one ingredient. The sugar free syrups have more chemicals then my college organic chemistry book. What should I do

    I made some coconut flour pancakes and thought they were pretty good:
    Gluten-free Toasted Coconut Waffles with maple cream

    The recipe is for waffles, but they make good pancakes too. Maybe use less coconut oil for pancakes.

    And I vote for maple syrup over sugar-free sweetener any day. Just go easy on it.

    I think you should use darker grades of maple syrup, like grade B. It probably has more trace minerals and things.

    The almond banana pancakes from mark's recipe page are pretty good. Bananas, almond butter, eggs. I add a little shredded coconut too.

    The pancake recipe from the Primal Palate is really good (scroll down for the pancakes). The added coconut milk makes them work better, and I skip the stevia and find they don't need the sweetener since any syrup you add will make up for it. They remind me of the buckwheat pancakes my dad made when I was a kid.

    I agree with Grumpy, darker maple syrup has more trace minerals, and I also like the stronger maple flavour in Grade B or C syrup.

    The best recipe I've found so far is Nourishing, Grain-Free Pancakes » Organic & Thrifty, I leave out the stevia. We've found that a tiny bit of maple syrup goes a long way with them.

    When we first went primal, my children and I were still in love with pancakes, and I tried every recipe known to man for grain free pancakes. All were yucky. (I have a very snobby palate! lol) The texture and taste were just not right, so we gave up.

    Two years later I've found Chebe products, which are made from modified tapioca starch. They are definitely a treat, but for this celiac family, they are a welcome treat as we can't just cheat and have some real pancakes in our 20%.


    I'm going to try using the bread mix as a pancake mix/waffle mix next time we have a big family brunch. I will definitely post the recipe if it's a success.

    I've tried so many and thrown them out and if I use coconut flour I get digestive issues. The BEST I've found is this one (top it with sliced berries)

    1 egg
    1 banana
    1 TBS almond butter (I use a squeeze pack)
    1/4 tsp. vanilla
    some cinnamon

    Mash all together until it's a batter and cook on pan in coconut oil.

    AH-mazing!
