Following SoG's Crustless No Dairy Quiche, what combination of ingredients would you fill it up with?

For starters I tried Bacon, mushrooms, spinach and cheddar cheese. Mmmmmmmm.

This is a staple in my diet and I would love to hear your creative ideas!

Here's the link to the basic quiche:

I'm planning to make some pancetta & blue cheese mini quiches tomorrow because I have the ingredients on hand already.

Oh I thought this was a frittata! We do spicy sausage, tomatoes, mushrooms, onion, bell peppers and jalapenos, garlic, and once put eggplant in there too. Delicious. I don't always have every ingredient there, but it's usually pretty close. That's an awesome meal to make in a huge pan, the leftovers are perfect for a quick meal!

Oh I don't usually add cheese, but I *try* to avoid dairy (not always successful with that). Mine is always about 12 eggs with all of those veggies and the meat already sauteed, then popped into the oven for about 30 minutes at 375.

this is a great way to include the kids too! I'm gonna have them make their own soon...they'll love it! How long would you bake mini ones? I assume you make them in cupcake tins?

I think in mine I'll put spinach, mushroom, and onion...

My favorite quiche was always ham, asparagus, and pepper jack cheese. I'm not really eating ham now, so maybe I'll use bacon... and I could throw in some jalapenos and skip the cheese.
