    Tried to make Primal Mayo

    I tried to make Primal Mayo per the instructions on this website. I took a lick and it tasted like olive oil and salt. Anybody else have the same issue? It hasn't chilled overnight yet so I am holding out hope.

    Try adding Almond Oil or Mac Nut Oil by the small spoonful until the olive oil taste is hidden. Also, 2 drops of stevia in about a cup of mayo helps make the taste more appropriately complex.

    We've pretty well perfected mayo. Here's our recipe:

    2 egg yolks
    2 tsp vinegar
    1/4 tsp salt
    2 drops stevia
    1 cup extra light tasting olive oil
    Almond oil or mac nut oil by the spoonful, to taste. Maybe around 1/8 of a cup or so.

    Almond oil is "nuttier" than mac nut oil, which is more neutral.

    It doesn't work with EVOO -- it will taste like bitter grass no matter what or how long you wait. You have to use extra light olive oil which doesn't have the strong taste or some other type of oil. My recipe is similar to Grokon's, but I don't put stevia (I put a dash of mustard though). I usually use half cider vinegar and half lemon juice for the acid. It really is very tasty and easy.

    My first time making it, I used EVOO and put it in a huge chicken salad, which I ate so as not to waste it -- but it tasted terrible, terrible. Good luck!

    My recipe is very similar to Grokon's as well. I use the extra light taste olive oil.

    1 egg + 1 egg yolk
    1.5 tbsp white vinegar
    Scant 1/2 tsp salt, or to taste (if you like a sweeter mayo, scale it back to 1/4 tsp)
    Scant 1/4 tsp stevia powder or to taste
    1 tsp plain ol' yellow prepared mustard
    1 cup extra light tasting olive oil

    To me, this tastes the most like commercial brands, but I think it's actually better. By adjusting the amounts you can also make it taste more like miracle whip (add more vinegar and sweetener)

    Mmm...that sounds interesting jes1014. I've never considered coconut oil. I'm going to try that. I've always had better luck with a lighter version olive oil. I had to try a bunch of mayo recipes before I found one that worked for me and then I made some adjustments from there. Here's my recipe:

    Homemade Mayonnaise Recipe


    Ingredients

    1 egg yolk
    1 1/2 teaspoons fresh lemon juice
    1 teaspoon of apple cider or white wine vinegar
    1/2 teaspoon Dijon mustard
    1/2 teaspoon salt plus more to taste
    ¾ cup olive oil
    Dash of pepper (optional)

    hmm so light olive oil is the trick hey?
    I make mine with spanish pure olive oil, and it is quite strong, but I just eat it anyway.

    Hmmm... I use a really tasty EVOO, but mixed 50/50 with Mac oil so that it isn't overpowering.

    I really like it, but it took husband a bit to adjust. Taste buds and all that.

    Apparently, the only thing I ever put mayo on was that most modern of inventions, The Sandwich!
    The recipe I used to use is this one.

    1 egg yolk
    1 capfull umeboshi vinegar
    blend till color changes...
    add light olive oil to desired consistency, done.

    The Ume is already salty. I used an immersion blender and a container from IKEA that just fit. Minimal mess and made in it's storage container.
