    Help me Redux this Recipe of Broccoli Casserole

    2 tbsps chopped celery (finely)
    2 tbsps onions (finely chopped)
    1 jar cheese (whiz)
    1 can cream of mushroom soup
    1 package broccoli (chopped, cook drain)
    1.5 cups minute rice (cooked)
    salt (taste)
    water chestnut (sliced or slivered almond)
    1 Saute' celery and onions in margarine.
    2 Stir in Cheese Whiz, soup, broccoli, rice, salt and chestnuts (or nuts).
    3 Bake at 400 degrees for 20 minutes.

    ok margarine = butter or coco oil
    1.5 cup minute rice = 3 cups cali rice

    but wtf for cheese wiz and cream of mushroom. I would like to keep the carbs as low as possible.

    I'd add actual mushrooms to your saute to get the mushroom flavor you'd get from the soup. As for the sauce base, I made a yummy green bean casserole by mixing goat cheese and cream cheese. It was based off of this:

    I also sometimes use creme fraiche and cheese to make cheese sauce. I'm not sure what cheese would replace Whiz flavor, maybe mild cheddar, but I usually go for a nice gruyere.

    Cream of mushroom-brown mushrooms in butter, add heavy cream, simmer till desire consistency
    Cheese whiz-use shredded cheddar cheese

    I would:

    brown the mushrooms, add heavy cream, let it simmer a little (5-10 mins, depends on how much heavy cream), add shredded cheddar and salt, stir till cheese is melted (may need more cream if it gets too thick)

    Mix sauteed veggies, broccoli and chestnut and spread in pan

    Pour cheese-mushroom sauce over it


    You can look up homemade cream of mushroom soup and make your own to completely replace the canned stuff and cheeze whiz is just regular cheese (or cheese flavoring) with a lot of crud in it to make it spooshy (I think, its been a long long time since I've seen a can/jar of cheeze whiz)
